The Principality of Asturias presents a great diversity of landscapes and contrasts, from valleys and mountains, rivers and green prairies, to its 350 Kms of coast, which constitute a very wide source of natural resources and that provides great quantity and variety of agricultural products that have served as raw materials for a flourishing industry.

The autochthonous natural resources constituted during many years the basis of the Asturian population's diet.

The varied Asturian gastronomy, with the course of the years, has been reflected in a productive sector based on the traditional productions and it has incorportaed the new technologies, adapting to the necessities of the market becoming one of the base sectors of the Asturian economy. The key of its success has happened, without a doubt, due to the effort and the restlessness of the professionals of the sector that have known how to take advantage of some magnificent resources.

The Asturian vegetable garden, the grasslands, the forests, the rivers, the sea, are the source of the raw materials. Also, the traditional recipes and innovators and the help of the new technologies have given origin to an agricultural industry that has guided the productions toward the sector " gourmet ", in which the quality of those raw materials prevails above the production to great scale.

Many of these raw materials have been recognized by means of diverse stamps of quality.Thus , Asturias has several Denominations of Origin and Protected Geographical Indications for: cheeses, ciders, sausages, vegetables, foods of ecological production, etc. These protection systems take charge of looking after the execution of some strict requirements that allow to assure the great quality of these products, and that they suppose a competitive advantage at the time of their commercialization.
