The meats

Asturias is a region of great cattle tradition. This has made that their meats enjoy a renowned prestige both for their consumption in fresh, as well as pre prepared cooked dishes or sausages. The pig and the corral chicken (pitu de caleya"), are good examples of meats of quality in the Principality. The veal possesses a Protected Geographical Indication based in two autochthonous races, Asturian of the valleys and casina. The Asturian veal is synonymous of veal of high quality.

Other meats, such as those of big and small game have entered in the last years with force in the Asturian gastronomy. These hunting meats, such as the wild boar, the deer, the hare, the partridge, the chamoise or the roe deer are very appreciated for their fresh consumption or as ingredients in sausages or cooked dishes.
